Elote-Inspired Salad

Fresh Ewa Corn, 1 Package
Cilantro, 1 Bunch
Red Onion, 1 Onion
Cotija Cheese, 1 Package (approximately 12 oz.)
Ho Farms Tomatoes, 1 Small Container
Chef Essentials Kim Chee Caesar Dressing, 1 Bottle
Directions
Ingredients
- 1 package fresh ewa corn (4 count)
- 1 bunch cilantro
- 1 red onion
- 1 package cotija cheese (approximately 12 oz.)
- 1 small container ho farms tomatoes
- 1 chef essentials kim chee caesar dressing (availabble at foodland farm ala moana, pearl city and ka makana ali`i
Directions
- On the grill or in a saute pan, lightly oil corn and sear on all sides until slightly charred, set aside.
- Take 1/2 of the red onion and cut it into small diced pieces, place in a bowl.
- Take 1/4 bunch of cilantro and pluck the leaves, finely chop and place in a bowl.
- Use 1/4 of the Cotija cheese and crumble into bowl.
- Cut tomatoes in half and combine with all ingredients.
- Cut corn off the cob and add to all the other ingredients.
- Add 1/2 cup Kim Chee Caesar Dressing and mix all ingredients until incorporated.
- Season with salt and pepper as needed.
